What
Fruit-filled hand pies, air fried, and with vegÂan ingreÂdiÂents. OrigÂiÂnal recipe from Food NetÂwork MagÂaÂzine. Air fryÂing is faster than bakÂing: 20 minÂutes vs 50 minÂutes
Ingredients
Dough
2 cups All-PurÂpose Flour (+ dustÂing)
2 Tbsp granÂuÂlatÂed sugÂar
ÂĽ tsp bakÂing powÂder
1 stick (8 Tbsp) cold unsaltÂed butÂter (small pieces)
2 Tbsp cold vegÂetable shortÂenÂing
4–6 Tbsp Ice Water
Filling
*your choice of fruit
1 cup BlueÂberÂries
1 cup RaspÂberÂries
½ cup StrawÂberÂries (chopped)
ÂĽ cup GranÂuÂlatÂed SugÂar
ÂĽ tsp ground carÂdamom
Kosher Salt (pinch)
1 Tbsp Water (+ 2–3 Tbsp)
1 Tbsp CornÂstarch
1 Tbsp Fresh Lime Juice
OptionÂal: Glaze (or equivÂaÂlent), Coarse Sugar/Confectioner SugÂar, Egg Wash/Olive Oil/Melted VegÂan ButÂter, Ice Cream
SupÂplies: ParchÂment paper, rolling pin, plasÂtic wrap, mixÂing bowl, spatÂuÂla, brush, drip pan/foil, air fryÂer
Time
Prep 40 minÂutes + Set 2 hours + Air Fry ~20 minÂutes = Total 3 hours

Directions
Prep
Dough
- Whisk flour (2 cups), sugÂar (2 Tbsp), salt (optionÂal ½ tsp), and bakÂing powÂder (ÂĽ tsp)
- Add half of butÂter (4 Tbsp) and all of shortÂenÂing (2 Tbsp)
- Rub until shortÂenÂing not detectable
- Add rest of butÂter (4 Tbsp) and work until pea-sized butÂter pieces remain
- Mix in ice water (4 Tbsp) with fork or hands
- GradÂuÂalÂly add more of ice water (1 Tbsp at a time) only until dough sticks when squeezed (it’s okay if it’s crumbly)
- Turn onto plasÂtic wrap
- Shape into a disk
- RefrigÂerÂate until firm (~2 hours)
Filling
- ComÂbine in saucepan: fruit (2½ ‑3 cups, chopped), sugÂar (ÂĽ cup), ground carÂdamom* (ÂĽ tsp), Kosher salt (pinch) and water (1 Tbsp)
- Cook mediÂum heat, stirÂring, until berries release juice and simÂmers
- ConÂtinÂue cookÂing and stirÂring, until thickÂened (~10 min)
- Whisk cornÂstarch and lime juice
- Stir into saucepan
- Cook until glossy (~30 sec)
- Remove from heat and let cool, stirÂring occaÂsionÂalÂly
*if no carÂdamom availÂable, can subÂstiÂtute. Best is 1:1 cinÂnaÂmon and nutÂmeg. OthÂer choicÂes: ginÂger, cloves
Cooking
Crust
- Divide dough into 8 pieces
- Roll each into a ball
- FlatÂten into ~6in rounds,
- Dust with flour as needÂed
- Spoon fillÂing in, leavÂing an edge for crimpÂing (about 2 dessert spoons each)
- Fold in half, then fold in edges, and crimp
- RefrigÂerÂate each while preparÂing the rest
Air Fry
- PreÂheat air-fryÂer to 350F
- Brush on egg wash/olive oil/melted butÂter to each pie
- Cut slits in each for ventÂing
- Use air fryÂer basÂket and cook 15–20 minÂutes until goldÂen brown
- Remove
- Let cool
- OptionÂal Glaze: Whisk confectioner’s sugÂar with 2–3 Tsp water until smooth, drizÂzle over pies OR use Apple JelÂly, etc
- OptionÂal: Dust with coarse sugÂar
- OptionÂal: Serve with Ice Cream

Notes
- I used peachÂes and blueÂberÂries, but would recÂomÂmend either less blueÂberÂries, or just peachÂes by themÂselves. BlueÂberÂries too powÂerÂful
- If I were to make again, I would do 2 half-batchÂes of fillÂing: one peach and one apple. Or whatÂevÂer flaÂvors, just 2 of them
- If you put too much fillÂing, then they will burst. LOL
- Your choice on rolled thickÂness of dough
- You don’t have to use shortÂenÂing, but it will make dough more dense
- I hapÂpened to use too much water and overÂworked the dough makÂing it soft and hardÂer to fold
- I also cheatÂed and placed in freezÂer for 30 minÂutes before placÂing in fridge
- Then messed up by takÂing the dough out too earÂly which meant it softÂened too much
- The origÂiÂnal recipe calls for salt in the dough porÂtion… I decidÂed that I don’t like it espeÂcialÂly since bakÂing powÂder is also salty. Will subÂstiÂtute either sugÂar or cut the salt altoÂgethÂer
- Be careÂful not to over flour when applyÂing fillÂing
