Combine the spices in a bowl: coarse salt, pepper, brown sugar, garlic powder, onion powder, cumin, paprika
Very important: remove the connective tissue lining the bone side of the ribs: Slide a butter knife under the film on a bone. Carefully wiggle until you can grasp the film and then pull. It should come right off cleanly.
Cut the rack into 2 if you want (you can also season them differently if desired)
Add soy sauce, rice wine, and mustard, spreading evenly on both sides
Rub the combined spices into the meat on both sides
Very lightly, sprinkle a hint of dill/pickle seasoning
Use plastic wrap to tightly bind the rack
Refrigerate overnight
Smoking day
Take the meat out and let it get to room temperature
Optionally, soak some applewood or pecan chips (there is plenty of argument about the functionality of this on the internet)
Prepare the smoker (my set up is quite involved, so it’s a good time killer)
Start the charcoal in the chimney starter (don’t use lighter fluid)
Finish prepping the thermometers, tongs, and workspace
Cut the fresh apples into pieces
When the charcoal is ready, pour it into the firebox and add a few chips and 1 or 2 apple slices. Yes, apple slices! (apple gives off this neato perfume when it burns)
Let the temperature get to be around 250F or so and put the ribs bone side down at the highest point (I’m using a vertical offset smoker)
Ribs can be smoked anywhere between 225F to 300F and they’ll still end up great. Faster cook at higher temps, slower at lower temps (duh.)
Note: When cooking with charcoal, bigger chunks are good for longer even burning, and smaller chunks give high heat faster. Adjust according to your cooking goals
About 30 minutes in and at 60 minutes throw in your wood chips and apple pieces. Remember that you can add smoke flavor, but you can’t take it away, so be wary of over-smoking your meat. I personally don’t like a lot of smoke flavor, so that’s it for the chips at this step for the rest of the cook.
About 1.5 to 2 hours in (depending on amount of meat), remove the ribs. They should have a nice bark on them at this point.
Brush on or spritz some apple juice all over the meat
Using peach paper (or foil), wrap the ribs
Place them back in the smoker
Add more charcoal to maintain the temperature and any remaining chips or apple pieces
After 1–2 hours, do the bounce/bend test: if you give the ribs a nice shake and they start to crack, then they’re done. If not, then brush on some more apple juice and let ’em keep cooking.
Good internal temp for the meat is, apparently, 180–200F
When they’re done, let the ribs sit for a little and then serve
What happened to me is that it was getting dark, the air temperature was rapidly dropping, and I didn’t want to start up another batch of charcoal, so I took them inside and put them in the convection toaster oven at 275 for an hour. The end product was really, quite good. I like subtle flavors, and this was subtle on every level: lightly sweet from the apple juice, perfect hint of smoke, no overpowering spices, a good bark crust despite the apple juice and peach paper. No need for BBQ sauce! The only thing that could have made it better was cooking at the higher temperatures the whole time (except I had other meats in there, too) and putting enough charcoal in there to achieve that.

East and South of the bees, but before the line of bouncy mushrooms is a turtle that will start rolling when you step near it
North and East of the map, you will be able to jump and glide through some rings held by some bees. Going through all of them to get a note
Uncle Pea’s Boss Song
Uncle Pea: After finishing Pea’s Song, you get his feather
Zonoark: To the right of the long line of bouncy mushrooms is a hidden passage that leads to Zonoark. Come back with its feather to identify it
Forest of Echoes

Just South of the entrance, jump on the giant sloth’s belly then near the little ones
South of the Sloth, guide the big bee to where the spiders are
Going East and riding the tree North, play the notes to help out the 2 frogs
Go back to the main level (that you entered on) and continue to the right. Before you reach the elevator jump up past the chameleon and push the large lever to activate the level’s water and get the last note
Owl Boss Song
If you head due East on the main level of the Forest of Echoes, you can ride the elevator up. Here, you will start the Owl’s Boss Song and learn a new note.
Gallus Palace
3 Music Notes
On the East on the middle level, there’s a female chicken who wants you to sing with her
One level up from the main, entrance level of the castle, is a mother chicken who is looking for her 4 chicks. You will find 3 of the chicks in the castle, but won’t be able to get the last one until you do the main boss stage for the palace
After finishing the Emperooster Boss Song, you can play the music for the guitar chicken towards the middle of the castle and you will get a music note
Poot: After gaining the Left button music note, glide off the left side of the Northeast exit (towards Woodpecker) and input the notes to get the feather. Return to the dungeon and give it to the “Chicken Fairy” …or is it “Pixie”
Precarious Peaks
4 Music Notes
Leave Egbert on one of the switches and jump to the other button. Play the music. It will break the rock and let the waterfall flow down to the wood things

After the Woodpecker Boss Song, you will go left. After passing the feather stuck inside the ground, you can jump and glide through some bee rings. When successful, you will get a note.
**I don’t know, but I suspect you need to come back after gathering music notes to get the last one**
Baron: After you remove the blockage over the waterfall with Eggbert’s help, the middle level will see Baron crashing his plane. His feather was the orange one in the beginning of the level when you were riding the platforms up.
Magpie Boss Song
As soon as you exit left out of Gallus Palace, you will leave Egbert behind and walk a ways before meeting some Magpies. This will trigger a Big Boss song that is basically a medley of all the boss songs you’ve sung so far. Return to the Owl.
Forgotten Cavern
Walk to the West. A cut scene will occur
Crystal Corridors
3 Music Notes
Descend South and to the West. Push the heavy block onto the switch which will start the mining carts moving
All the way West you will find a Mynah bird standing on a platform. Set eggbert on one of the left switches, then push the blocks around in the simple puzzle so that one lands on the bottommost switch. Stand on the last switch yourself and play the notes. There’s a reset button on the right side if you mess up.
Make your way up to the top towards the Cassowary. You’ll pass its legs and then get stuck between rocks. Play the song to continue and get the last note
Continue to the Cassowary who will tell you to continue North and East using the updrafts
Buridoss: To the left of the 2nd note puzzle (above) is a secret passage where you’ll find Buridoss. His feather is to the East and North of where he is. Just ride the platforms up above the Mynah birds. Return to him to identify it.
Vice Paradise
4 Music Notes
Jump up until you see the 4 floating platforms. It’s a puzzle to where you need to push the hay bale on the upper left all the way to the right, using the platforms, to break the rocks.
Continue to the right into a room with a bunch of floating balloons. Use them to jump to the upper left ledge with the feather.
I got 4 notes but am unsure how I got the 3rd one? It was either after the Kookaburra fight or on the bottom right of the map where the fish and the chicken with the fishing pole is.
Deep south of the map is a puzzle with one ledge and 2 hay bales. Push one off when the platform is to the right and then push the other off with the platform is to the left. Put Eggbert on the last switch and play the song
Boss’ Feather: Upper left corner of balloon jump room is a white, red, blue, and purple feather. After fighting the Kookaburra go down and jump up the balloons to the left, use the mushroom and talk to The Boss
Kookaburra Jamboree Boss Song
Lower right portion of the map (follow the arrows) you confront the 3 Kookaburras that have been making Cassie cry by laughing at her. Fight them with your voice!! Then go back and tell Cassie about the resolution you arrived at.
Cassie’s Song
Return to Cassie and tell her the good news. She’ll be so happy that she’ll start to sing and incredibly complex song with notes that flash in and out. But hey, you learned a new note! A!
Which means you can go to the left and get the blue and orange feather which is Cassowary’sfeather.
Return to Owl by following the updrafts.
Magpie Fight AGAIN
The battle starts off easy and then ramps up in speed and then complexity.
The miscreants fly off and you continue to Owl who tells you about the mysterious masked bird with the long tail. He tells you to head down to the caverns to get the next note.
Lost Lake
Go down to where you just fought the Magpies and when you go left, the stone will move. Ring the bell for Stefano who paddles you to the other side while serenading you (Kapp’n style).
Sparkling Shores
Francisca’s Feather: The upper left corner of the map has a pink feather that belongs to the flamingo on the far upper right corner of the map

The Chef’s Ingredients
There are 8 total, but you only need 5 for the main story
Up and left of the first save point, go left until you’re prompted for the first ingredient. Glide up the draft and jump on the balloons. Push the grub down to The Chef.
Above that level is the fish head. Complete the simple box puzzles to finish
Next level up is the tentacle. Push the right block onto the middle button. Push the upper block onto the bottom left block. Push the stacked blocks until the bottom one falls in the gap and make sure to push the upper block onto the right ledge (but be sure not to push it right next to the other! Or you’ll have to reset!). With the left two buttons depressed, play the beat to move the platform to the right. Then push one block to the right until it falls onto the platform, then push the remaining block all the way to the right. Use Egbert on the other button and jump on the rightmost platform to play the beat.
Continue up for the snail shell. You need to move it with the moving platforms. Move the upper middle one first, then the upper right, then the lower middle.
Moving onto the right side of the map and starting with the lowest level is the jellyfish? This a ride-the-wind-current level. On the far upper right of the map is a red and gray feather. Follow the updrafts to the upper left and push down the prize.
The next level is for a squid. This is another block puzzle. It’s seemingly straightforward, but you’ll find that you can’t push a block over a block with a squid on top of it. So, push the right two blocks into the nearest hole, then use the leftmost block to jump up. Ignore the squid for now, push the upper block to the right and down. Then push the leftmost block into the hole, then go back to the remaining block and push it until it’s almost in the hole, but not down. Jump up and push the squid onto it. Jump down and push the stack until the lower block falls down.
Now for the beetle. Easy Peasy. Just jump across the lava, though nothing happens if you fall in it.
Last puzzle! The shrimp. Climb the level and drop the blocks to push your prize home
